Almogrote

Almogrote is original from Gomera, a little island beside Tenerife. It’s done from hart goat- or sheepcheese, red peppers and olive oil. I got this recipe from one of my canarian collegues.

Recipe:

1 red Pepper
1kg cheese
200ml Olive oil
3 gloves garlic

Original the cheese is grated by Hand but you also can use a blander.
Clean the pepper and put it in a blender, add garlic and olive oil.Now add slowly the cheese until you get a nice cream.

Dorada,

The most famous fish dish from the canarians are the "Dorada". I had my first one in a little restaurant in "El Purtito". Fresh from the sea and very easy cooked.

Recipe:

1 whole Dorade (600g)
3 cloves pealed garlic
1 Tablespoon Oliveoil
1 Tablespoon fresh parsley
Oceansalt and pepper

Fill the dorada with the parsley, garlic and spread the olive oil all over. Season the dorade with salt & pepper. Put it in tin foil and close it like a bonbon. Now cook it in the oven on 160 degrease for about 22 min. Normally you serve it with green Mojo, papas arrugadas and salad, but you can serve it as well with vegetables and rice.

Papas arrugadas (new potatoes)

The canarian "papas arrugadas" are done with small new potatoes. You get them with nearly every kind of food and you always eat them with one of the famous "mojo's".

Recipe:

1kg new potatoes
100gr Oceansalt
1/2 lemon

Leave the potatoes unpealed and wash the potatoes very well. Put them in a big pot with cold water and add the lemon and the salt. When the water starts boiling lower the fire and keep it cooking for about 30 mins. Afterward put the potatoes in a spider and leave them drying untill they got a nice crust of oceansalt.

Mojo verde

The green version of Mojo is specialy made for cheese and fish, you get it as well with "papas arrugadas".

Recipe:

12 cloves of garlic
1 green Pepper
1/2 l Oliveoil
40ml Whitewine vinegar
3 Tablespoons fresh Koriander
1 Avocado

Blend all together in a big blender.

Mojo rojo

One of themost famous classics from the canarian kitchen is the "Mojo rojo". You get it normal acompanied with "papas arrugadas" (new potatoes) and you it it with all kind of meats. Like in all other countries got everybody his own special recipe, i presents you the most classic version.

Recipe:

500gr red pepper (a bit more ore less doesn't matter)
100gr pealed garlic
13gr cumin
200ml Red wine vinegar
1/2l Oliveoil
50gr almonds
a bit fresh thyme (dried will do as well)
Oceansalt to your liking

Put all together in a big blender and blend it well.
For those who like it hot add a bit of chilli.
